Remember when Violet Beauregard is intrigued by Willy Wonka’s Magic Three Course Dinner Chewing Gum which is Tomato Soup, Roast Beef, and Blueberry Pie with Ice cream, but even when he says it isn’t ready for chewing, she disobeys Willy Wonka’s warning and chews it anyway? This is how I feel when I carb load every Saturday morning. Its a tradition in our house that the kids look forward to each week. I especially love when I have leftover blueberries that aren’t juicy enough for the kids to snack on alone so, I make them into fresh blueberry sauce.
Here is the quick recipe:
1 C fresh blueberries
2 tsp lemon juice
1 tsp ground cinnamon
1 T maple syrup or agave nectar
In a small pan over medium-high heat, combine blueberries, lemon juice and cinnamon. Stir frequently until berries soften and pop open. This only takes a three to four minutes. Use a potato masher to smash the blueberries. Remove from heat and add maple syrup or agave nectar to your desired sweetness. Serve warm or at room temperature. Store the leftovers in a mason jar in the fridge for up to two weeks.
For the pancakes, I simply use the recipe on the back on the Bisquik box and add 1 tablespoon of vanilla extract. They always turn out perfectly thick and fluffy.
